Miso Caramel Bulkan Banana Tart

Serves 4

INGREDIENTS:

  • - ¾ cup granulated sugar
  • - ¼ cup water
  • - ½ cup coconut cream
  • - 2 Tbsp miso
  • - 3 pcs bulkan banana, halved lengthwise
  • - 1 sheet puff pastry, thawed

PROCEDURE:

1. Preheat your WOLF M Series Oven to 375°F using the CONVECTION mode.
2. Make the miso caramel by stirring together the sugar and water in an 8-inch oven-safe pan. Place in your WOLF Induction Cooktop, use BOOST mode for high heat, and let it boil without stirring. When you see bubbles, brush the edges with a wet pastry brush to prevent crystallization. When the sugar water turns a light honey color, turn down the heat to medium-low.
3. Gently swirl the pan a few times to evenly distribute the browning. As the color turns amber, remove it from the heat.
4. Slowly pour in the coconut cream while continuously whisking.
5. Add the miso and whisk until smooth. Set aside.
6. Add the banana slices to the pan, cut side down.
7. Cut the puff pastry into a circle slightly larger than your pan. Lay on top of the bananas and tuck the edges down inside the pan. Bake in your preheated oven for 20 minutes, until the puff pastry is golden brown.
8. Remove from the oven and let it cool in the pan for at least 5 minutes before turning it upside down onto your serving plate. Best served with ice cream!
