Mixed Grain Bowl with Sesame Crusted Tuna

Serves 4

INGREDIENTS:

    For the grains

  • - 1/2 cup red rice
  • - 1/2 cup adlai
  • - 1/2 cup quinoa
  • - 3 cups water
  • - 2 Tbsp sambal or chili paste (optional)

    For the sauce

  • - 1/4 cup soy sauce
  • - 1/4 cup muscovado sugar
  • - 1 pc star anise
  • - 2 cloves garlic, peeled and smashed
  • - 1 inch pc ginger, peeled and smashed
  • - Black pepper, as needed

    For the sesame crusted tuna

  • - 2 Tbsp white sesame seeds
  • - 2 Tbsp black sesame seeds
  • - 400g tuna loin

    For the bowl toppings

  • - 2 Tbsp cooking oil
  • - Sea salt, as needed
  • - 300g oyster mushroom
  • - 4 pcs egg
  • - 1 carrot, cut into strips
  • - 1 stalk onion leeks, cut into strips
  • - 100g cilantro chopped

PROCEDURE:

1. Place the red rice, adlai and quinoa in 3 separate solid pans. Add 1 cup of water to each pan and place in your WOLF Convection Steam Oven. Choose the STEAM mode with temperature set to 210°F and cook for 30 minutes.
2. Prepare the other components while the grains are cooking. Make the sauce by combining soy sauce, muscovado sugar, star anise, garlic and ginger in a small pot. Add a pinch of pepper. Heat until sugar has dissolved and mixture is thick, about 5 minutes. Let it cool.
3. Mix the white and black sesame seeds on a plate. Pat the tuna loin with paper towels. Brush with 1 tbsp of the sauce then press into sesame seeds to coat. Heat 1 tbsp cooking oil in a pan over high heat until hot. Sear tuna for about 30 seconds on each side. Set aside.
4. Clean the pan. Heat 1 Tbsp oil and sear the mushrooms. Add more oil if necessary. Season with salt and pepper. Set aside.
5. Once the grains are cooked, remove from the WOLF Convection Steam Oven and add the eggs. Set the timer to 7 minutes. Immediately take out the eggs and shock them in ice water for 15 minutes.
6. Mix the sauce and sambal in a bowl. Combine the cooked grains and gradually mix in the sauce. Start with 2 Tbsp sauce, taste and adjust accordingly.
7. Assemble the bowl. Divide the seasoned grains onto your serving bowl. Top with egg, sliced tuna, mushroom, carrots, onion leeks and cilantro.
